Hi there im thinking of replacing my deore rear mech and 8spd alivio pods,

with a sram x-7 rear mech and 8spd sram 5.0 twist shifts.

will my gear changing improve?

And before any one asks i cant use the sram trigger shifters cause im only 8spd
and i like gripshift.

shram and shimano are not compatible together but the higher brand of shimano are very good

Not necessarily. SRAM ESP stuff only works with other ESP stuff, but SRAM also makes shifters that work with Shimano mechs.

Personally I'm not a fan of Gripshift but if you like it then SRAM's your only option...

I think sram works way better than shimano but like all things it,s a matter of opinion. Apparently sram are bringing out 8 speed x-7 trigger shifters soon but you could always stick with Shimano and get 8 speed XT shifters and keep your Deore rear mech.
