I have a 70mm stem at the moment, so what difference will a longer stem make, will the steering be faster or slower? And how much difference will 10mm make?

Longer will make the steering slower and make the bike a little more stable in a straight line. 10mm won't make a huge difference

I like my bike's handling, so I don't want to change it too much, but the stock stem on a Harkrock is a massive lump, so it's got to go.
