I dont know if you can still get them but I use a Pertex Buffalo windshirt. Worn over my coolmax bike jersey it's fantastic and can keep you warm but not sweaty at all.
That prob the point there misty. What works for one is entirely diff from someone else. Takes quite a few mistakes to realise what works and what doesnt for each person to be comfortable.
I use some really thin Nike ATG trainers for riding in. I have goretex boots but find that once the water gets in they are horrible. The nike ones let the water in, no problem. But they dont hold it and once things get a little drier, they dry out quick smart. I find this suits me. Others would hate it.
Another vote for the Gore N2S from me. I have the 2004 version (with the zip off arms) and it is the best piece of cycling clobber I have ever bought. 0-25 dg isnt a joke. Though have to say I've just bought a Paclite Storm-Fit jacket for the winter months (though i've got through 2 winter with just the N2S so far), I guess I'm turning into a whuss in my old age!
