I can't get my chain to settle properly in the highest gear when on the big ring - the adjustment screw is out as far as it can go yet it keeps trying to hop back on the 8 cog.

Teh mech does not seem to be damaged or bent in anyway, the bike has just been serviced as it is only 3 months old.

Suggestions anyone?

Take it back to whoever serviced it.  It's possibly just a bit of cable adjustment needed.

check to see if cog 9 or 8 is bent, they are not particular stiff and are quite easy to bend between the alloy carrier pins.

If the cogs were damaged would it not cause the same problem on the middle ring?

When you say "highest" do you mean "highest gear ratio" (ie smallest sprocket) or "highest" in the sense of "furthest up the cassette" (ie biggest sprocket)? If it's the smallest sprocket, the cable tension's probably too high - turn the barrel adjuster (on the mech if it's conventional, on the shifter if it's a Shadow) clockwise 1/4 turn at a time until it's happy. If it's the biggest sprocket, the reverse is true, although big ring/big sprocket is a nasty gear to be in anyway.

Check that they have put the rifght spacers in the bottom bracket..

bad reading of the instructions can  sometimes send that off line

I had this (athough with sram not xt) and after replacing the mech, cassette, checking chain line and banging my head against a wall, discovered that the mech hanger was ever so slightly bent inwards towards the wheel - I stuck it in a vice and gently bent it back, worked fine straight away.
