I have a shimano LX hollowtech II (M580) chainset and have worn the middle ring out in not very much time at all. Anybody suggest a good value+more durable alternative, or somewhere where I can get the shimano ring for not much money?

shimano deore, it's a bit heavier being steel, but lasts longer

Hard wearing and Cheap-Not too much of a weight penalty either.

BTW LX and XT rings are made of cheese or chocolate (can't remember which), just the mearest hint of mud and they wear out.

WTF!? You're using LX at the moment you pilchard, a new one will last just as long! Buy a Deore if you have a problem with durability.
