Lack of cars cutting me up, friendly interaction with other cyclists and local people on the way...
One of my recent favourites was a climb from Alpirsbach to Freudenstadt in the Black Forest. Some of the hills a re murderous, but it was deep forest (cool) and Freudenstadt is just after the summit of the ride which lets you cool off. The town itself is beautiful and in summer the council kindly put up pavillions for people to keep out of the sun and cool off.
