You'll be fine flying with tubeless just drop the pressure to about 30 psi thats all. It shouldn't make any difference really.
br, no the Joe's do sit outside the bead and are visible when tyre is on. This does not cause any issues what so ever. Mine worked fine for 6 months of hard riding.
You could try the Spec S-Works Sauser Wind, superlight and 2bliss (tubeless ready) maybe abit narrow for some, 1.8" had them on the Epic and loved them, Ave weight 480g, light for a tubeless tyre.
The Racing Ralph is a good light tyre as well though, as Dave stated.
